Brown Rice risotto!
About every few weeks I search, ” Actually great tasting brown rice recipes”
and today I was inspired by, Cookies and Kate. I found her recipe for brown rice risotto and I looked up a basic risotto recipe and ran from there.
Here is what I came up with.
Brown Rice risotto Ingredients
1 Tbsp of Olive Oil
Asparagus (or any other veggie)
1 Tbsp of minced onions
1/2 Tbsp of minced garlic
2 cups of water
2 bay leaves
Chicken or protein of your liking
1/2 Tbsp Oregano
In a large pan heat olive oil, onion, and garlic
Once everything is browned pour 2 cups of water and bay leaves into the pan
Let the water boil and feel free to add any other spices
Once water is boiling add in both bags of rice and let the rice soak up all of the liquid
Turn down heat and add in Cream of mushroom, asparagus, and oregano
You are done!
Serve with chicken or more veggies!

This is my favorite pasta dish I have ever made.
This dish is a little different because the noodles are a quinoa and brown rice base so it tastes a little different than regular pasta but it was amazing. (and again a very reasonable meal got all of the ingredients at Trader Joes again)
Brown rice and quinoa noodles
*Pre-grilled chicken chicken patty(Sounds weird but trust me it was great)

Cook noodles in boiling water
When noodles are done drain all but a 1/2 cup of water and let noodles sit in the water
Quinoa noodles tend to be very sticky so you will want the water
Slice roasted chicken patties and cook on a pan with olive oil until there is a visible color change
Dice tomatoes and cook in the same pan for a little (just to get more of the flavor out)
I just tossed the noodles in some butter and salt and pepper and even put some lemon on the them and seasoned the tomatoes with salt and pepper!
This is a really fresh tasting dish I made this summer and it is crazy cheap.
(I bought everything at trader joes for this meal)

Separate the frozen tilapia and thaw in hot water
While tilapia is thawing, turn on a skillet with olive oil and throw on bell peppers and onions cook for 15 minutes
Place tilapia on a big enough square of foil to wrap the tilapia in
Place cooked peppers and onions around the tilapia
Season with lemons and limes (you can leave the slices in the foil)
Wrap up the fish and vegetables in the foil and cook for 15 minutes (until fish is flaky) on 350 degrees
Follow directions on package and sprinkle with cinnamon or nutmeg when done cooking
Garnish with slivered almonds
Cooking for groups can be intimating, but dinner doesn’t have to be this 2 hour long ordeal I made this dish in about 20 minutes and everyone loved it.
Sweet Potato Stir Fry
Clean 3 medium sweet potatoes
Slice potatoes to be about 1/2 inch slices
Spread slices on a foil covered pan
Drizzle olive oil modestly over top of slices
Cook at 400 degrees for 12-15 minutes
Cook at 400 degrees with sweet potatoes
Pour frozen broccoli onto a foil covered pan
Cook for about 15 minutes
Egg whites and Shrimp
Pour into a stir fry pan
1 tablespoon of lemon juice
3 teaspoons of garlic
1/2 tablespoon of olive oil
Pour clean uncooked shrimp on top of lemon, garlic, and olive oil mix
Cook until shrimp is pink
Crack 2 egg whites unto the same pan and mix eggs and shrimp together
Slice about 15 cherry tomatoes and place them in a hot pan with olive oil, cook until black edges start to form on the tomatoes
Cook microwavable brown rice in the microwave
Combine all ingredients in one pan or
Combine ingredients in separate bowls for serving
Top it off
I found an amazing natural ingredient almond and ginger dressing that I topped my bowl off with and it made this dish extra yummy!
Shrimp and Quinoa stir fry
One of the Easiest and yummiest dishes for eating at home.
Cook quinoa following the package instructions
Place lid on quinoa and leave off of heat until shrimp and veggies are done
Place vegetables (onions, chopped peppers, and a little bit of garlic added in the end) in a frying pan until onions are just turning brown.
After veggies are done add in cooked shrimp until heated
Place cooked quinoa on top of veggies and mix it all up.
Scoop about one cup of the mix into a bowl and you can save the rest for lunch the next day.
Just cook the chicken in a pan and toss everything all together!
Grilled Chicken Salad
Breaded Grilled Chicken
Salt n Peppa
This is a salad that will actually fill you up and give you energy. Some salads are just veggies and no fats or starches but this one is filled with healthy fats (avocado and olive oil), and the breaded chicken gives you some carbohydrates! I also always drink milk with dinner to get some dairy but you could always eat some yogurt for dessert later in the night.
1/4 tsp Cinnamon
1 tsp Cumin
1 tablespoon of olive oil
pinch of Sea salt
Beat Chicken Breast under a baking sheet
Mix Olive oil cinnamon cumin and sea salt in a bowl
Pour all of the mixture in a zip block bag
Place chicken breast into zip block bag and zip up
Mix around chicken in the mixture and after put chicken onto hot pan to cook
Cook Couscous following instructions on the box (we got the olive oil couscous from Whole Foods)
Another one of our sides was a Caprese salad to get veggies and fat in the meal.
This is a really good meal to pack up and heat up at work/school for lunch.
