Personal French Toast Bake

This morning I woke up wanting something different than toast and eggs but wasn’t sure how to not end up with a huge batch of pancakes and I’m the only one home!

So I looked up a bunch of french toast recipes and realized I could definitely figure out a way to make a personal batch of french toast.
This is the perfect recipe because it has 2 servings of grains and 2 servings of protein so it was filling and a good amount of food for breakfast!

 

Ingredients

  • 2 slices of whole wheat bread
  • 3/4 cup of coconut milk (or regular)
  • 1 tsp of vanilla
  • 1 egg
  • banana slices
  • cinnamon

Steps

  1. Slice up the bread into cubes
  2. Spread the bread into a pan to cover the bottom (make sure the pan is small enough)
  3. Mix the egg, vanilla, and milk in a bowl
  4. Pour egg mixture over bread
  5. Sprinkle with cinnamon and put banana slices on top
  6. Cook for 35 minutes at 350 degress

I woke up this morning and was the only one awake and I got to enjoy the sun room and some quite time with Jesus for about 2 hours before the house woke up. Slowly my mom and sister started walking around and getting ready for the day and before my friend came over to read Psalms I decided I wanted to make homemade granola for breakfast. It was an incredible slow and sweet morning.

I decided to make my own granola because,

Store bought granola wrecks me….

For some reason I have never felt completely at ease with buying granola…there are always a whole bunch of ingredients added into it that just aren’t really necessary and 15 grams of sugar in 1/4 cup of granola is crazy. No body needs that I’m sorry but breakfast is the first meal you eat and it shouldn’t be made up of mostly sugar. I was able to come up with a crazy simple recipe after looking through some basic whole oat granola recipes. And yes, Kate is a genius and this recipe was inspired by her.  I saw how simple her recipe was and ran with it.

 

Here is my rendition of the recipe,

 

Easy and clean Granola

Ingredients

  • 4 cups of whole rolled oats
  • 1/2 cup of avocado oil
  • 1/2 cup of raw sliced almonds
  • 1 cup of raw pumpkin seeds
  • 1 Tablespoon of Cinnamon
  • 1/4 cup of raw honey
  • 1/4 cup of dried fruit

 

Prep/cook

  1. Set oven to 350 degrees Fahrenheit
  2. Place wax paper on a cookie sheet
  3. Mix oats with all other ingredients in a large bowl
  4. Taste….because trust me you want to
  5. Spread mix onto pan (covered in wax paper)
  6. Bake for 27 Minutes (or until brown and slightly crunchy)
  7. Let granola cool for at least 10 minutes after baking

Spiced Banana Pancakes

I’m on break, which means cooking and baking everyday!

Yesterday morning I knew I wanted to dive back into finding a great banana based pancake recipe! Last year I used to try to come up with a good recipe all the time but the pancakes always failed.

But…these my friends are amazing.

These pancakes are filed with so many spices and goodness that they absolutely don’t need syrup…I love syrup and I am serious they really don’t even need yogurt on top but to make it more nutritious I added some anyway.IMG_4562

 

Spiced Banana Pancakes

Bowl 1

  1. 3 bananas mashed
  2. 2 teaspoon of vanilla extract

Mash bananas and vanilla throughly

Bowl 2

  1. 2 teaspoon cinnamon
  2. 2 teaspoon ginger
  3. 2 teaspoon turmeric
  4. pinch of sea salt
  5. 3 tablespoon of whole wheat flour
  6. 1 egg or Flax egg
    1. Flax egg= 1 Tablespoon of ground flax seeds
    2. 1 Tablespoon of water

Combine

  1. Mix bowl 2 into bowl 1 and Cook!

 

 

Feel free to top with plain greek yogurt and maybe some berries!

 

 

Carrot Cake Breakfast Muffins

*These muffins are a little crumbly! If you wanted they would be a great mix in with yogurt ( like how you normally mix in granola).

My friend Aiden and I needed to make some type of breakfast food for a bible study and we decided on muffins. We started searching and came across this recipe for vegan carrot muffins. We aren’t vegans though so we took this recipe as our base and then tweaked it. It’s a great recipe and Anne has a great blog and you should check it out (especially if you are a vegan :)).

Set oven to 350 degrees

Ingredients:

  • 1 & 1/2 C whole wheat flour
  • 1/2 C brown sugar
  • 1/4 C chopped walnuts/ or pecans
  • 2 tsp. cinnamon
  • 1/4 tsp. all spice
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • Pinch of salt
  • 1 tsp. vanilla extract
  • 1 cup of oil
  • 1 egg
  1. Mix together, flour, sugar, cinnamon, nuts, spice, baking powder and soda, and salt.
  2. In a separate bowl mix oil, egg, and Vanilla.
  3. Pour mixed wet ingredients into dry ingredients bowl and mix throughly.
  4. Fill muffin tins with mix and set in the oven for 25 minutes

On the Go Breakfast! Green Banana Smoothie

I make this smoothie for either breakfast or an after school snack!

It’s really simple but will keep you really full and it gives you the energy you need with the fat, dairy, and vegetables in it!

Green Banana Smoothie Ingredients

  1. 3 cups of Spinach
  2. 2 Tbsp of Peanut Butter
  3. 1 cup of yogurt / 1 cup of milk
  4. 1 Banana

*If you were really hungry in the morning I would probably add 1 cup of oats!

Easy Baked Oatmeal

If you ever need something to bring for a breakfast with a lot of people, make this!

This took me about 5 minutes to put together this morning, and 20 minutes to cook. I searched a million recipes this morning and just gave up and made this! All of the baked oatmeals I found were the same basics, Milk, oats, and an egg but they all had lots of sugar so I decided to make one with less sugar, no butter, and a banana.

Easy Baked Oatmeal

Dry Ingredients

  • 2 1/2 cups of Oats
  • 1/4 cup of brown sugar
  • 1 tsp of baking powder

Wet Ingredients

  • 1 mashed banana
  • 2 cups of milk
  • 1 tsp of mashed avocado
  • 1 egg

Steps

  1. Mix dry ingredients in a bowl
  2. Mix wet ingredients in a bowl
  3. Combine ingredients by stirring in wet ingredients mixture
  4. pour into a 8 inch square or oval baking dish with cooking spray
  5. cook at 375 for 20 minutes

Extras

  • I sprinkled cinnamon over the top before cooking
  • You can add slices of banana during the last 3 minutes of cooking it, and they will cook nicely
  • You can mix in any type of fruit of nuts to this recipe

Banana Mash Whole Wheat Pancakes

    Currently Eating these and… you have to make them!

I like the idea of blending ingredients and having the recipe only take about 10 minutes total! I took a few different recipes that I like and mixed them all together and came up with these.

Blender ingredients:
  • 1 egg
  • 1/4 cup of oats
  • 2 tsp. of baking soda
  • 1 cup of milk (used 1%)
  • 1 banana
  • 1/4 of Greek Yogurt (this is a substitute for usual buttermilk in pancakes)
  • pinch of cinnamon
Dry Ingredients:
  • 1 cup of whole wheat flour
Steps
  1. Place all blender ingredients in the blender and, Blend!
  2. Pour Flour in mixing bowl
  3. Mix in wet ingredients to flour
  4. Start cooking!
Extras
  1. Add Strawberries
  2. Heat up strawberries for 10 seconds for a sauce
  3. Dark chocolate crumbles added to pancakes when cooking
  4. blueberries
  5. Granola
  6. Almonds
