Cooking for groups can be intimating, but dinner doesn’t have to be this 2 hour long ordeal I made this dish in about 20 minutes and everyone loved it.
Sweet Potato Stir Fry
Sweet Potatoes
- Clean 3 medium sweet potatoes
- Slice potatoes to be about 1/2 inch slices
- Spread slices on a foil covered pan
- Drizzle olive oil modestly over top of slices
- Sprinkle
- Sea-Salt
- Cinnamon
- Pepper
- Cook at 400 degrees for 12-15 minutes
Broccoli
- Cook at 400 degrees with sweet potatoes
- Pour frozen broccoli onto a foil covered pan
- Cook for about 15 minutes
Egg whites and Shrimp
- Pour into a stir fry pan
- 1 tablespoon of lemon juice
- 3 teaspoons of garlic
- 1/2 tablespoon of olive oil
- Pour clean uncooked shrimp on top of lemon, garlic, and olive oil mix
- Cook until shrimp is pink
- Crack 2 egg whites unto the same pan and mix eggs and shrimp together
Tomatoes
- Slice about 15 cherry tomatoes and place them in a hot pan with olive oil, cook until black edges start to form on the tomatoes
Final Step
- Cook microwavable brown rice in the microwave
- Combine all ingredients in one pan or
- Combine ingredients in separate bowls for serving
Top it off
I found an amazing natural ingredient almond and ginger dressing that I topped my bowl off with and it made this dish extra yummy!
